Obsessions

Ok I admit I have a problem. I am "obsessed" with a few shows Ok maybe I should really say, I am obsessed with CERTAIN people on a few shows. Here is a get to know me. My current obsessions :)

9 years

It has been 9 years. And I remember almost everything. When Febuaury rolls around each year it is hard to turn off the memories. I won't go into details, because a lot of you already know the main story. My one and only sister went blind because of one month on acne medication. One month and the rest of her life was changed forever. At the time it is hard to look forward to the future and think that everything is going to be OK. Amanda has to deal with this everyday, every minute, every second of her life. At least once this time of year, I think "if only". If only we would have realized. If only she didn't take the medication at all. If only......... But she did, and this is what she lives with. I look up to my sister more then she may know. She has made something of her life despite the blindness. She has lived her life to the fullest, despite her blindness. I don't know if I would have been that brave to wake up every morning knowing that when I opened my eyes it was still going to be dark. I don't know that I would have been able to never see the faces of my family again. I don't know that I could never know what my husband looked like or nieces or nephew looks like. These are the things that Amanda will never have but she has moved forward with an awesome attitude. She has her moments. Of course she would have her moments. And every day she has challenges that most of us will never have in our lifetime. Thank you for being and example to me. Thank you, Amanda for never giving up. By the way Happy Anniversary!!!!

A lie!

The ad said these curtians will block 99% of light. Does this look like it blockes even 9% light? I don't think they block 2%. Can you tell I am irritated?
I was excited when I saw some curtians advertised for $9 regular $20. They block out light which would make my room, which faces the east, darker so I can actually sleep in. (light wakes me up easy) These curtians suck!!! I should have just taken them back, but I threw away my old ones, the ones that worked a little better away!

To go back to school, or not to go back to school.

I don't know why....this happens a few time, the problem is the feeling is stronger this time. I want to go back to school.....sometimes. I feel that I am always in the same type of job, a little unstable. Production can move at anytime, anywhere. Do I really want to put my self through that, work and school? Can I handle work and school? Cause there is no way I can not work full time. I am afraid....that I would be taking on to much and fail. Do I really want to have homework at my age? These are the questions that keep rolling around in my help. I have no idea what I am going to do, but I need to make this choice once and for all soon......any advice?

Time marches on!!

It's been a while, I know. I wait and wait for summer to come and when it gets here things get so busy and it is almost gone before you know it. Which is what has happened again.
We took a trip to Moab, Arches, and CanyonLands over the Fourth of July and this next weekend, the last real summer weekend I guess, we will go to the Tetons and maybe on day in Yellowstone. Add that to our summer full of Scera shows and musicals and our weekends have been packed. Here is hoping I will be able to blog a little more now that all those are winding down.

Fortune cookie

Fortune cookies are the best part of the meal. The whole reason to get chinese food. Not just for the cookie but note inside that holds a bit of advice or what the future holds. Apparently you don't need fortune cookies anymore. You had your own fortune teller with you along. This is what my last cookie said.


If only I had known this sooner.

Cauli-Rice Pinto Bean Casserole

If you haven't heard of it, I know it sounds weird I thought it did but it was really good. And very low in carb!

(with my own changes)
1 large head cauliflower
1 lb lean ground turkey
salt & pepper
1/2 tsp cummin or hot sauce if you don't have cummin which is what I used
t tsp chili powder
1/2 tsp garlic powder
1 can pinto or black beans, drained and rinsed
1 can diced mexican style tomatoes
1 can chopped green chilies
1 cup sour cream I used fat free
3 cups cheddar cheese. I only used 1 cup on top
Grate the cauliflower in a food processor or with a hand grater, or by hand until it resembles small rice granules. Put the grated cauliflower in a large microwave safe bowl. Do not add water, do not cover and microwave for 5 minutes. Drain off any water (I had none), fluff and set aside.
In a large skillet, brown the ground turkey (or beef) with cummin, garlic powder and chili powder mix in to meat well. Stir in the beans, diced tomatoes and green chilies. Then add the sour cream. Spray a casserole dish with cooking spray and layer with cauli-rice, meat mixture then cheese and repeat until everything is gone. Bake at 350 for 30 minutes.
