Cauli-Rice Pinto Bean Casserole

If you haven't heard of it, I know it sounds weird I thought it did but it was really good. And very low in carb!

(with my own changes)
1 large head cauliflower
1 lb lean ground turkey
salt & pepper
1/2 tsp cummin or hot sauce if you don't have cummin which is what I used
t tsp chili powder
1/2 tsp garlic powder
1 can pinto or black beans, drained and rinsed
1 can diced mexican style tomatoes
1 can chopped green chilies
1 cup sour cream I used fat free
3 cups cheddar cheese. I only used 1 cup on top
Grate the cauliflower in a food processor or with a hand grater, or by hand until it resembles small rice granules. Put the grated cauliflower in a large microwave safe bowl. Do not add water, do not cover and microwave for 5 minutes. Drain off any water (I had none), fluff and set aside.
In a large skillet, brown the ground turkey (or beef) with cummin, garlic powder and chili powder mix in to meat well. Stir in the beans, diced tomatoes and green chilies. Then add the sour cream. Spray a casserole dish with cooking spray and layer with cauli-rice, meat mixture then cheese and repeat until everything is gone. Bake at 350 for 30 minutes.

sorry i wasn't able to try it. you need to make it again so i can. maybe next time i wont have a dentist appt before dinner. :)
